Strawberry Bread
Looking for a different treat to use fresh strawberries? Try this great strawberry bread.
Ingredients:
1 1/2 cups fresh strawberries, sliced
1 1/2 cups all-purpose flour
1/2 cup sugar
1 t baking powder
1/2 t baking soda
1/4 t salt
1/4 t ground coriander
1/4 t nutmeg
1 t ground cinnamon
2 eggs
1 t vanilla extract
6 T melted butter
Directions:
Preheat oven to 350 degrees. Grease a 8 X 5 pan and dust with flour. Prepare strawberries by removing stems, rinsing, and slicing. In a large mixing bowl, combine all dry ingredients. In a medium bowl, beat the eggs until foamy and then add the vanilla and melted butter (make sure the butter isn't hot). Stir the strawberries into the liquid and then pour that mixture into the dry ingredients. Stir until combined, but don't over stir. Scrape into prepared pan and bake for about an hour. Check for doneness with a toothpick. Cool on a wire rack.
